Hi Rosie, Good to know the Wollemi Pine arrived safely. The trees are now starting to go into hibination and forming their Polar Caps. Yes, I agree that in your situation it would be best to plant now. In the UK it is a different matter and it is best to wait until next May. The plant does appear to grow better in a low pH but I dont think it is ericacious. It might be best to start it off with some low pH compost around the planting hole but I think it will adapt. The winter rains will help establishment and you may have to irrigate in your climate. We are hearing of more problems in southern Europe with plants grown in containers and being overwatered. I dont think the overwatering problem occurs when planted in the ground but for growers in containers - WATCH OUT FOR TOO MUCH TLC. THe Wollemi would prefer to be a tad on the dry side thatn too wet.
